For a change, I thought it would be nice to invite the "Thanks Giving season" by making Pumpkin Pancakes for dinner, as a treat for my Family...So of course I get out the (Krusteaz buttermilk pancake mix) and persue my dreams of Beautiful,Lavish, Deliciously Fluffy Pancakes with Hot Maple Syrup flowing like a stream, and a picture perfect Dopple of Butter in the center...I know my mouth is watering just thinking about them:) But in my Kitchen, it is Not like the Cooking shows at all, everything is Not perfectly measured and displayed like "so" in little tiny matching bowls...
Oh!!! No, on the contrary, it is a disaster, mis-match bowls, dirty dishes, flour everywhere, kids squealing & running in circles, with no clean hand Towels, LOL:) It is chaotic, but very entertaining!!!
So I mix my 2 cups of pancake mix, 1 1/2 cups of water, this is of course to make 14-15 pancakes right??? Wrong~O~ because you and I both know that it never makes as many as the box says... then I get a small can of pumpkin pie filling and add half the can, no joke!!! I finely chop the pecans, and throw them in, and add 2 big heaping Tablespoons of Brown sugar, 1 egg, & stir it all in:) I have the eggs in the pan cooking, and the hash browns in the oven...and I am feeling pretty good about myself!!!
I pour my first pancake into the Hot grill with a big smile on my face, It comes out ugly and just not display material(this is normal for my first pancake so I press on)I try again and again, and again, But nothing only burnt pieces of goo, that don't even resemble a pancake...(my smile fades) I felt like a failure, and did not want to let my family down so, I decided to just make the normal boring pancakes...and then a Miracle Happened:)
Since I had all of that mix & didn't want it to go to waste... so I added a little Cinnamon to the mix, and poured it into 3 mini bread pans, sprinkled some Brown sugar on the top & crushed pecans and put it into the oven for 25-30 minutes... To my surprise!!! it turned out perfectly, "Pumpkin Bread" goodness, and my huge mis-hap turned into something magical & mouth watering:)
